The plural of staff and information will remain the same however you can say pieces of information.

The word 'staff' is a collective noun and is therefore pluralized already. The word 'information' is an uncountable noun and therefore does not receive an 's'. If you want to refer to more than one item of information, you can use a countable noun, i.e., "Items of information." Alternatively, you can use a quantifier. i.e., "They have some information." Where 'some' is a quantifier.
