Start test"That" is used when the information following it is necessary to understand the sentence, while "which" is used for extra, non-essential information. For example, "The book that I'm reading is interesting" (only one book is being referred to) vs "The book, which has a red cover, is interesting" (there could be multiplr books). NOTICE the position of the comma(,) after the word 'book' when using "which".
