This expression reflects the general cultural appreciation for weekends as a time to unwind and enjoy a brief respite from the demands of the workweek.
Friday in most countries signifies the end of a work week. It invites the opportunity to rest and relax. So by being thankful for its arrival one is saying they are looking forward to a good weekend of leisure as opposed to the busy work week they had.
I can only tell you, that Friday is the Holy Sabbath and the Jewish people look forward to it, because it is a day of rest and holiness.
