That's a long story, it has lots of usages, but the most common ones are: - listing items (a,b,c...) - subordinative sentences - starting conjunctions(if, since,..) - between adjectives of the same noun - introducing phrases - special adverbs (too, however,...) - middle conjunctions (and, so....)

Can be either. You can eat a lot of fruit or eat a lot of fruits. The version with “fruits” implies more types of fruit, where as the “fruit” version implies total quantity.
