Use WHICH when the information in the dependant clause is non-essential or adds extra information. E.g. The book, which was published in 2010, has become a bestseller around the world. Use THAT when the information in the dependant clause is essential to the meaning of the sentence. E.g. The car that I bought last year broke down on the highway. Remember to use WHICH with commas before and after the clause, while THAT does not require commas.
